Allways use a recipe when pressure canning. That's how you make sure that the process is done safely.

How it works
When you are pressure canning from your home, you need to know at which altitude you live to know the correct PSI to use. Say for example, you live at a hight of 700m above sea level, you'd need more pressure to get the CanMate to heat up and reach 115 degrees celsius. You'd need to reach at least 15 PSI, when using the weighted gauge or 11PSI when checking the dial gauge.
Our CanMates don't come with 11, 12 or 13 PSI weigths. So when using the dial gauge, you can heat up the CanMate and controle the heatsource to have it stay at the desired PSI. Do still place the weighted gauge to build pressure, but don't wait for it to start vibrating. Make sure your dial gauge is well calibrated when using this method.

Weighted qauge
The weigted gauge wil vibrate when the right PSI is reached. As long as it is vibrating, you can be sure the contents of the CanMate are hot enough to kill all bacteria.

Dial gauge
The dial gauge will show the PSI on the meter. But please note: the dial gauge is fragile and needs to be recalibrated every year. Make sure it's well calibrated when depending on the dial gauge. The weighted gauge will always give you the correct information.
