Pressure canning jar check list:
Mason jars are great for pressure canning, but you can also use reusable jars. The following conditions will help you choose the right ones:

The lid
You need to be able to check if the jar is vacume sealed properly. Some jars wil have a lid that has a 'button'. When you press down from the top you'd feel that it bounces back and hear a 'plopping' noise. This 'button' will be sucked in during the pressure canning process, and afterwards you should not be able to press down the button.

Strong glass
When a jar's purpose was initialy for home decoration, we don't recomend using it. The glass needs to be resistant to extreme temperatures.
No damage
Always check the glass for any chips or scratches, it should be 100% intact when pressure canning. The lid schould be free of rust or damage aswel. Nothing should prevent the lid from sticking on to the glass during the whole process. Make sure the glass and lid are clean. Some discoloring is no problem.

Weck jars
When using jars from the brand 'Weck', we recommend using at least 4 clamps to hold down the rubber. During pressure canning, this rubber ring could start to move around, which possibly leads to food getting in between the lid and the ring and preventing a proper vacume.
